One-Pot Taco Pasta (30-Minute Weeknight Dinner)

Craving tacos but short on time (and clean dishes)? This one-pot taco pasta delivers everything you love about taco night — seasoned beef, melty cheese, sweet corn, and black beans — folded into a creamy, cheesy pasta that cooks entirely in one pot.

The uncooked pasta simmers right in the seasoned beef broth and salsa, soaking up all that taco flavor as it cooks, and a blanket of shredded cheddar melts over the top at the very end. Dinner goes from stovetop to table in about 30 minutes with exactly one pot to wash.

Pile it into bowls and let everyone add their own toppings — sour cream, diced tomatoes, cilantro, avocado, or a squeeze of lime. It is the kind of weeknight dinner that gets requested on repeat, and if one-pot dinners are your love language, our Creamy Garlic Mushroom Chicken Thighs is another weeknight favorite worth bookmarking.

Why You'll Love This Recipe

  • One pot, 30 minutes — the pasta cooks in the sauce, so there is nothing to drain and only one pot to wash
  • Big taco flavor — taco seasoning, salsa, and browned beef in every bite
  • Family-friendly — mild enough for kids, with toppings everyone can customize
  • High in protein — beef, beans, and cheese deliver a hearty, filling bowl (estimated)
  • Great leftovers — it reheats beautifully for lunch the next day

Ingredients

  • 1 tablespoon (15 ml) olive oil
  • 1 pound (450 g) ground beef (80/20 or leaner)
  • 1 medium yellow onion, diced (about 1 cup / 160 g)
  • 3 cloves garlic, minced
  • 1 (1-ounce / 28 g) packet taco seasoning
  • 12 ounces (340 g) short pasta, such as rotini, penne, or rigatoni
  • 2 cups (480 ml) low-sodium beef broth
  • 1 cup (240 ml) chunky salsa
  • 1 cup (160 g) frozen corn kernels
  • 1 (15-ounce / 425 g) can black beans, drained and rinsed
  • 2 cups (225 g) shredded cheddar cheese, divided

Optional toppings:

  • Sour cream, diced tomatoes, chopped fresh cilantro, diced avocado, lime wedges, sliced jalapeños

Instructions

  1. Heat the olive oil in a large Dutch oven or deep skillet over medium-high heat. Add the ground beef and onion and cook, breaking the beef into crumbles with a spoon, until the beef is browned and the onion is soft, 6–8 minutes. Drain off any excess fat.
  2. Stir in the garlic and taco seasoning and cook for 1 minute, until fragrant.
  3. Add the uncooked pasta, beef broth, salsa, corn, and black beans. Stir well, making sure the pasta is submerged in the liquid.
  4. Bring to a boil, then reduce the heat to medium-low, cover, and simmer for 12–14 minutes, stirring once or twice, until the pasta is tender and most of the liquid has been absorbed.
  5. Remove from the heat. Stir in 1 cup of the shredded cheddar until melted and creamy, then sprinkle the remaining 1 cup of cheese over the top. Cover and let stand 2–3 minutes so the cheese melts.
  6. Serve hot with your favorite taco toppings.

Tips for Success

  • Stir once or twice while simmering. The pasta at the bottom can stick, so a quick stir keeps everything cooking evenly.
  • Start checking the pasta at 12 minutes. It keeps softening as it stands, so pull it when it is just tender.
  • Use a wide, heavy pot. A Dutch oven distributes heat evenly so the pasta cooks through without scorching on the bottom.
  • Shred your own cheese. Bagged pre-shredded cheese contains anti-caking starch and melts less smoothly.
  • Adjust the consistency. If the sauce is too thick, stir in a splash of broth; if it is too thin, simmer uncovered for 2–3 minutes before adding the cheese.

Variations

  • Ground turkey: swap the beef for 1 pound (450 g) ground turkey for a leaner version — it soaks up taco seasoning beautifully, as in our Baked Turkey Meatballs.
  • Spicy queso style: stir in a 4-ounce (115 g) can of diced green chiles with the salsa and use pepper jack instead of cheddar.
  • Vegetarian: skip the beef and double the black beans, using vegetable broth in place of beef broth.
  • Smoky: use fire-roasted salsa and add 1/2 teaspoon smoked paprika with the taco seasoning.

Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or in a pot over medium-low heat with a splash of broth to loosen the sauce. It also freezes well for up to 2 months — thaw overnight in the refrigerator before reheating.

FAQ

Can I make this ahead of time? Yes. Cook it fully, cool, and refrigerate for up to 4 days. The pasta will absorb more sauce as it sits, so add a splash of broth when reheating.

What is the best pasta shape for one-pot taco pasta? Short, sturdy shapes like rotini, penne, or rigatoni hold up best — their ridges catch the sauce. Avoid long noodles like spaghetti, which do not cook evenly in this method.

Is this recipe spicy? It is mild as written, with the salsa being the main source of heat. Use a hot salsa or add sliced jalapeños if you want more kick.

Can I make it gluten-free? Yes — use your favorite gluten-free short pasta and check that your taco seasoning and broth are certified gluten-free. Gluten-free pasta can cook a little faster, so start checking at 10 minutes.
